Summer Berry & Goat Cheese Salad w/Candied Nuts drizzled with Raspberry Vinaigrette
This salad has been a summer staple since the Lemon Tree Cafe' opened over a decade ago. When the weather heats up, our customers can't wait for this salad to pop back up on our menu. It is bright, delicious and is the most vibrant dish on the table. It is the PERFECT salad for your Memorial Weekend festivities & July 4th bbq, picnics or any party. But....beware it is addictive..
Ingredients:
We use local organic greens & berries from Blue Sky Farms
Salad:
baby greens, arugula or spinach (even kale!)
strawberries
blueberries
blackberries (or raspberries, peaches, citrus-whatever you love!)
candied nuts (see our next easy recipe - coming soon!)
creamy goat cheese
a fruity dressing (see our raspberry vinaigrette dressing recipe below)
Raspberry Vinaigrette:
1/4 cup olive oil
2/3 cup of balsamic vinegar
1 cup of frozen raspberries
1-2 tbsp. agave or honey (to your sweetness taste)
1 tsp lemon juice (of course!)
1/2 tsp salt
Instructions
Salad:
Layer your lettuce, sprinkle with fresh berries, crumbled goat cheese & top with candied nuts. We love using walnuts, pecans or almonds. All are sweet, crunchy & addictive. If you decide to use kale as your greens, you can add everything into a bowl and toss with the dressing. This salad is the perfect summer salad that pairs insanely with any grilled meat or fish. If you are not a fan of goat cheese then try replacing with feta cheese.
Dressing:
Mash berries until liquefied. Pour berries into a mason jar with a lid; add olive oil, balsamic vinegar, agave or honey, lemon juice and salt. Cover jar with lid and shake until dressing is mixed well. Store in refrigerator.
